Chef Axel was born in Old Havana, Cuba, and his culinary interest began when, at 7 years old, his grandfather would cook several different foods and have him try them each to compare flavors and textures. From there, while working at a hostel for tourists in Old Havana, he was asked to help the owner in the kitchen one day; the owner was so impressed with the food he made that day that she hired him as her cook — at 17 years old! Axel continued developing his cooking skills while working in that kitchen and simultaneously going to culinary school, where he graduated with honors. After spending his first month in America with family in Miami, he then arrived in Lancaster, PA. Chef Axel spent his first 9 months in Lancaster working at Lancaster Cigar Bar and helping to open Old San Juan Restaurant; he then joined the kitchen team at Tellus360. Axel is now the Head Chef at Tellus360, and brings his unique approach to food with him to share with all those who visit.
